Shirataki noodles, otherwise known as konjac noodles, have become increasingly popular over the last few years. They are commonly known as the “keto noodle”, “grain-free noodle” or “miracle noodle”. You may already be wondering... a noodle with no grains? How can that be? Yes. You read that correctly. We are here to tell you all about these noodles and how to cook them properly.
Shirataki noodles are made from the konjac plant. The plant is ground up and used to form noodle and rice shapes. This plant contains almost no calories or carbohydrate. The noodles are comprised of around 95-97% water. The rest of the noodle contains traces of protein, fat, and calcium. Konjac noodles contain a unique type of soluble fiber which has been shown to promote fullness, improve heart health, optimize digestion, and regulate bowels.
When it comes to cooking shirataki noodles, preparing them properly is super important! This is a make it or break it. Something important to recognize is that these noodles are very versatile and will ultimately take on whatever flavour or sauce they are cooked in!
How should I prepare konjac noodles?
Most konjac noodles have instructions, however, there is a special way to give your konjac noodles the best texture and taste! Keep scrolling to find out!
1 package of Shirataki noodles (6-8 ounces)
1-2 tablespoons sea salt
Open package of konjac noodles and place them in a strainer. You will notice the noodles give off an unpleasant stench. Run the noodles under cold water for 3 minutes until the smell is gone.
Fill a medium sized pot with water and bring to a boil. Add 1-2 tablespoons of sea salt.
Add rinsed noodles to the filled pot and allow to boil for 10 minutes. Make sure there is enough water to completely cover the konjac noodles. Strain afterward.
Place a large non-stick skillet on medium-high heat. When skillet is hot, add strained konjac noodles. Sauté for 3-5 until water is mostly evaporated.

Konjac noodles should be stored in the pantry as they are shelf stable. Once a package is opened, any konjac noodles that are not used should be stored in a bowl of water in the fridge and kept for up to 7 days. Prepared noodles can be stored in the fridge for up to 4 days.
